- 2 cups banana peppers, chopped
- 1 cup onion, finely chopped
- 1 cup vinegar
- 1 cup sugar
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon mustard seeds
Instructions
- Prepare the banana peppers by removing the stems and seeds, then chop them finely.
- In a large pot, combine the chopped banana peppers, onion, vinegar, sugar, salt, garlic powder, and mustard seeds.
- Bring the mixture to a boil over medium heat, stirring occasionally.
- Once boiling, reduce the heat and let it simmer for about 20 minutes.
- Remove from heat and let it cool slightly before transferring to sterilized jars.
- Seal the jars and refrigerate for at least 24 hours before using to allow the flavors to meld.
Notes
- For a spicier relish, leave some seeds in the banana peppers.
- This relish can be stored in the refrigerator for up to 2 months.
- Great as a topping for grilled meats or as a condiment for sandwiches.
