Ingredients

  • 2 cups dried navy beans
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1 onion, chopped
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 cups water
  • 1/2 pound bacon, chopped (optional)

Instructions

  1. Soak the navy beans overnight in water.
  2. Drain and rinse the beans, then place them in a pot with 4 cups of water.
  3. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. In a separate bowl, mix together brown sugar, molasses, onion, mustard powder, black pepper, and salt.
  5. Add the cooked beans to the mixture and stir well.
  6. If using, add the chopped bacon to the pot.
  7. Transfer the mixture to a baking dish and cover with foil.
  8. Bake in a preheated oven at 325°F (165°C) for 2 hours.
  9. Remove the foil and bake for an additional 30 minutes to thicken the sauce.

Notes

  • For a vegetarian version, omit the bacon.
  • Adjust the sweetness by adding more or less brown sugar.
  • These beans can be made ahead of time and reheated.
