Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Add the egg yolk and vanilla extract, mixing well.
- In another bowl, combine the flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Fold in the diced apples and lemon juice.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden brown.
- Let cool before serving.
Notes
- For a sweeter cookie, add more sugar to the dough.
