Description

  • 1 cup brown sugar
  • 1 large egg
  • 1 cup apple cider

  • 1 cup powdered sugar
  • 1/4 cup cream cheese, softened
  • 1/4 cup unsalted butter, softened (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the egg, apple cider, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until the edges are lightly golden. Let cool completely.
  8. In a bowl, beat together the cream cheese, butter, and powdered sugar until smooth to make the filling.
  9. Spread the filling on the flat side of one cookie and top with another cookie to form a sandwich.
