- 1 cup apple cider
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and line a cupcake pan with liners.
- In a saucepan, bring the apple cider to a boil and then reduce to a simmer until it reduces to about 1/2 cup.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the reduced apple cider and vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill the cupcake liners about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool completely before frosting.
Notes
- For a richer flavor, consider adding chopped apples to the batter.
- These cupcakes pair well with cream cheese frosting.
