- 2 cups mashed potatoes
- 1/2 cup shredded cheese
- 1/4 cup green onions, chopped
- 1/2 cup breadcrumbs
- 1/4 cup all-purpose flour
- 1 egg, beaten
- Salt and pepper to taste
- Cooking spray
Instructions
- In a large bowl, combine the mashed potatoes, cheese, green onions, salt, and pepper.
- Form the mixture into small balls, about 1 inch in diameter.
- Dip each ball into flour, then into the beaten egg, and finally coat with breadcrumbs.
- Preheat the air fryer to 400°F (200°C).
- Place the potato balls in the air fryer basket in a single layer and spray lightly with cooking spray.
- Cook for 10-12 minutes, or until golden brown and crispy, shaking the basket halfway through.
- Remove from the air fryer and let cool slightly before serving.
Notes
- Feel free to add herbs or spices to the mashed potato mixture for extra flavor.
- These can be made ahead of time and frozen before cooking.
