- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1 cup mozzarella cheese, cubed
- 1/2 cup Italian dressing
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, black olives, and mozzarella cheese.
- Pour the Italian dressing over the salad and toss to combine.
- Add chopped parsley, salt, and pepper to taste, and mix well.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
