Description

Quick and delicious vegan burrito wraps that can be made in just 10 minutes.


Ingredients

Scale
  • 1 large tortilla
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup cooked rice
  • 1/4 cup corn
  • 1/4 avocado, sliced
  • 1/4 cup salsa
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Lay the tortilla flat on a clean surface.
  2. In the center of the tortilla, layer the black beans, cooked rice, corn, avocado, salsa, and cilantro.
  3. Season with salt and pepper to taste.
  4. Fold in the sides of the tortilla and then roll it up tightly from the bottom.
  5. Slice in half and serve immediately.

Notes

  • Feel free to add any other vegetables you like.
  • These wraps can be made ahead of time and stored in the fridge.
  • Serve with extra salsa or guacamole on the side.
